All my knives are from Kershaw Shun line and I’m very happy with them, so I bought this one to add to my collection. First impression on opening the box “WOW this thing is BIG.” I didn’t think I’d be able to use this knife because I have small hands and the balance felt off. So it sat in its nice presentation box for a while. I finally decided to use it and almost took couple of fingers off. It’s an extremely sharp knife and my other Kershaws weren’t this sharp. It did take some getting used to, but now I love this knife. I don’t use it every day, but if I need to do a lot of slicing and chopping I take it out. It gets the job done much quicker than my other knives and is a pleasure to use. Almost no pressure is required to cut, just let the knife fall and it cuts all the way down to your board. This knife requires all of your attention on it, otherwise you’ll seriously hurt yourself. I wash it as soon as I’m done with it and put away immediately. Overall, after initial fears about size, heft and self-mutulation subsided, I’m very happy with it.

I find the handles a very comfortable fit, and the blades are so well balanced that I don’t find them tiring at all. The parer is a precision instrument, and I love the santoku (both sizes). The sharpener is exactly that: so use with care and keep a honer handy as well for in between touch up. I used the small utility for getting every last bit of meat off of a turkey carcass after Christmas — think the small honesuki might be even better for this task — but the utility did a superb job and was easy on the wrists — I find the short handles make for more finesse in handling and the knife seems to “go” where I want it more easily.
Not everyone will find these to their taste, but I think they are great!

I have the MTH-80 Mighty Chef Knife with Dimples. It came extremely sharp out of the box and stays that way. I have only honed it lightly a few times with a borosilicate glass steel after smacking the cutting block with my poor style. This thing rocks. With my Chicago Cutlery knives the same abuse would put very slight dents in the edge barely visible as a glint of light under a bright light and I could feel the loss of sharpness after a few cuts. The edge on the MAC is so acute and fine that I didn’t want to take a change and loose anything with a steel (which is not recommended) or even a 1200 grit ceramic steel (which is recommended) so I went with the borosilicate glass rod which is finer. It still cut fine and I didn’t notice a difference but I could feel a slight change in the razor edge. The rod brought the edge back to new or better every time. This thing is tougher and holds an edge better then good non-stainless carbon steel knives I have used.
