A lot of owners also love the fact that things don’t stick to the blade much. This is a common problem with cheap knives, and it can really slow you down. Another thing that owners love much about these knives is that they have very little “wedge effect”. Because of how sharp the blade is, the knife simply slides down when you cut things. The blades are exceptionally shiny steel, very similar to Victorinox’s Swiss Army knife. Things don’t stick to the blade much. Like Swiss Army Knives, they also have a comparatively thin back and very little ‘wedge effect.’ This means when you cut things, they don’t fly across the room. You don’t push. The exquisitely sharp blade just kind of slips down through, leaving even carrots right where they were.
